Spring Recipes – Chocolate Crêpes

Don’t those chocolate crêpes look absolutely delicious? They’re not even hard to make! So, get out your whisk, you’re going to love making them again and again.

A quick word about the difference between a crêpe and a pancake. Crêpes are basically very thin pancakes. The fact that they’re so think makes them easy to fold or roll without breaking. If you find yours are coming out too thick, literally just coat the pan with a thin layer of batter.

Chocolate Crêpes

  • 1 2/3 cup chocolate milk
  • 2 eggs
  • 1/2 cup flour
  • 1 Tbsp sugar
  • 1 pinch salt
  • 2 tsp cocoa powder
  • 1 Tbsp melted butter
  • 1 1/2 cups fruit (banana, strawberries, whatever you like)
  • 1 cup whipping cream
  • 2 Tbsp icing sugar
  • 1 tsp vanilla extract
  1. Stir together flour, sugar, salt, and cocoa; set aside.
  2. In another bowl, whisk eggs. Add chocolate milk and stir until combined.
  3. Slowly add liquid mixture to dry mixture. Combine well; set aside.
  4. Heat pan over medium heat.
  5. While pan is heating, whip cream until stiff peaks form, gradually adding icing sugar.
  6. Add just a little bit of oil to the pan. Pour just enough crêpe batter to thinly coat the pan.
  7. Use a spatula to flip the crêpe once it begins to brown.
  8. Remove the cooked crêpe to a plate. Keep warm while continuing with the rest of the batter.
  9. Fill each crêpe with a 1/4 cup of fruit. Roll up. Top with a dollop of cream and more fruit.

Spring Recipes – Roast Vegetable and Noodle Salad

Ramen noodles are hugely popular … and not just with university students! They’re quick and easy to prepare, and delicious, too. This healthy noodle salad features fresh, roasted flavors. It’s perfect for a light lunch or even as an appetizer!

Serve with: Sausage-Stuffed Peppers

  • 4 carrots
  • 1 lb mushrooms
  • 1 cob corn, husked
  • 1 sweet red pepper
  • 2 Tbsp olive oil
  • 5 green onions, sliced
  • 2 pkgs (85 g each) ramen soup noodles (discard the flavor packets)

Chive and Oregano Dressing

  • 1/3 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 clove garlic, minced
  • 1/2 cup chives, sliced
  • 1 tsp dried oregano
  • 1/2 tsp each salt and pepper
  1. Brush carrots, mushrooms, and red pepper with oil. Place the vegetables on a tray.
  2. Roast vegetables in a preheated 350F oven for about 10 minutes, or until crisp-tender. Slice vegetables into bite-sized pieces. Place in a large bowl.
  3. Meanwhile, cut kernels off of corn cob. Place kernels in a bowl; add enough water to cover. Bring to boil either on the stovetop or cook until tender in the microwave. Drain well and add to the bowl.
  4. Cook ramen noodles in a pot of boiling water for 2 minutes, or until desired doneness is reached. Drain and rinse with cold water. Add to vegetables and toss.

Chive and Oregano Dressing

  1. Stir together oil, vinegar, and garlic. Add chives, oregano, salt, and pepper.
  2. Add dressing to vegetable-ramen mixture. Toss to combine.

Grilled Shrimp with Creamy Horseradish Dip

You are going to love this recipe! It’s super easy, quick, and so delicious. The dish is customizable in so many ways, too. You can choose the size of shrimp you want, and you can adjust the spiciness of the dip.

If you can grill these outdoors, I really encourage you to do so. Get out into the wild (even if it’s just your back patio). Breathe in the fresh air, and soak up the sun’s rays.

If your stove is equipped with a grill, fire it up, turn on the range hood fan and start cooking! Otherwise, you can always make these in your favorite pan. No worries. Just cook and eat.

Grilled Shrimp with Creamy Horseradish Dip

  • 1/2 cup sour cream
  • 1 Tbsp prepared hot horseradish (feel free to use a milder version, if you’d like)
  • 1 Tbsp each parsley and chives, finely chopped
  • 1/2 tsp each cider vinegar and granulated sugar
  • 1/4 tsp salt
  • 1 lb frozen shrimp (21 to 25 count), thawed, peeled, deveined
  • 2 Tbsp olive oil
  • 2 tsp pepper
  • 1 lemon, sliced into quarters
  1. Combine sour cream, horseradish, parsley, chives, vinegar, sugar, and salt. Stir well, set aside.
  2. Toss shrimp with oil and pepper.
  3. Place lemon quarters on a hot grill. Grill, cut side down, until well marked.
  4. Place shrimp directly on the grill. Turn once. Cook for 3 to 5 minutes, until shrimp are pink.
  5. Transfer shrimp to a platter. Place lemon quarters on platter around the shrimp. Serve with the dip.

Winter Recipes – Grilled Halloumi With Peaches

I hesitate to file this recipe under the heading of Winter Recipes. First of all, it’s March, and March is the month of spring. As far as I’m concerned, the weather can do whatever it wants in March because spring – and all the wonderful buds and blooms it brings – is just around the corner.

So, regardless of how warm or cold it is right now wherever you happen to be, you have to fire up the grill and give this dish a try. If your stove comes equipped with a built-in grill, you’ve got it made. You don’t need to go outside at all. I do, however, encourage you to get outside. Take a deep breath of fresh air, let the sun shine down upon you, then pull out the tongs and get cooking!

Halloumi, if you’ve never had it, is an absolute treat. Traditionally Greek, it’s a semi-hard, unripened cheese made from a mixture of goat and sheep milk. It’s brined in salt water, and has a very high melting point. So, it’s perfect for the intense heat of the grill. As always, turn on your range hood fan before you begin grilling (even if you’re grilling at your outdoor kitchen).

Grilled Halloumi With Peaches

  • 1 garlic clove, sliced
  • Pinch salt
  • 2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1 tsp white sugar
  • 2 Tbsp parsley, chopped
  • 8 oz halloumi, cut into bite-sized cubes
  • 2 peaches
  • 8 skewers
  1. Preheat grill.
  2. Mash garlic and salt together in a large bowl. Add lemon juice, oil, sugar, and parsley; stir until well combined. Add halloumi; coat well.
  3. Leave halloumi to marinate at room temperature between 30 minutes and 1 hour.
  4. Slice peaches into thick quarters.
  5. Thread halloumi cubes and peach slices onto skewers.
  6. Grill each skewer 4 to 5 minutes per side, or until cheese and peaches are warmed through.

These take up very little space on the wall (because they’re essentially flat). The ductwork hidden behind the cupboard also takes up little room, allowing you more storage space. Pro Tips: All About Downdraft Range Vents

It’s going to come as no surprise that we here at Range Hoods Inc love talking about range hoods. And why not? They’re innovative, necessary for clean indoor air quality, and truly beautiful additions to the heart of the home – the kitchen!

But, what if you’re living in a home where installing a range hood is impractical? If you’re renting an apartment in an older home or building, there’s a good chance that your home doesn’t have a range hood. Believe it or not, range hoods were not standard in kitchen design in the past!

You can ask your landlord to install one for you. But, if he or she is unwilling, there are other ways for you to improve the air quality in your home. All of that smoke, odor, and steam that’s produced when you cook has to go somewhere!

Here’s another idea for you: buy a stove with a built-in downdraft ventilation system. Here’s how it works.

Pros

  • A powerful fan lays beside the burners or the vent pops up from the back of the stove.
  • Downdraft vents take up very little space. So, there’s more room for upper cabinet space.
  • Downdraft vents are usually invisible unless in use.

Cons

  • Downdraft vents are only found on cooktops. You will have to buy a separate oven.
  • They tend to be more expensive than a regular range hood or a regular stovetop.
  • Depending on how much and what you cook, downdraft vents can be much less efficient.
